Process
- Ruach Ascent is crafted with exceptional care and attention to detail at our Ruach distillery, utilizing our twin copper pot stills to create a spirit of remarkable quality. We begin with the finest European brewers malt and our proprietary distillers yeast, combining natural spring water sourced from the Golan Heights with our crystal clear new-make spirit.
- The spirit is then matured in three types of casks, each contributing unique characteristics to the final product. Our casks rest unhurried in diverse microclimates across the country for an average of five years. Although Ruach Ascent is labeled as NAS (No Age Statement), the accelerated aging process in Israel's climate imparts a depth and complexity comparable to Scotch whiskies aged 12 to 15 years or more. The result is a whisky with exceptional richness and character.
- Ruach Ascent is crafted with an intricate cask maturation process that enhances its depth and complexity. We begin with a variety of cask types to shape the spirit:
- First-fill ex-Buffalo Trace Bourbon barrels provide a foundation of vanilla and caramel notes.
- New American Oak barrels with varying levels of char add layers of spice and richness.
- Spanish Oak Oloroso Sherry Butts contribute a depth of fruitiness and nutty undertones.
Once the whisky reaches its desired profile, we carefully marry the casks together and then transfer the whisky into a fourth cask: French Oak XO Cognac Barriques. These barriques, which previously held rare XO Cognac, infuse the whisky with additional notes over a period of 3 to 4 months in the Golan Heights. This finishing process, known as Additional Cask Enhancement (ACE), imparts subtle nuances and refined character to the final expression. The result is a whisky that combines traditional maturation with an elegant, Cognac-influenced finish.
- Ruach Ascent, at 47.7% ABV, benefits from a unique maturation technique borrowed from the Cognac world: slow water reduction. This process involves gradually reducing the spirit's alcohol content with water during maturation. This technique allows the wood sugars in the barrels to develop more fully, which in turn softens and enhances the whisky's flavor profile and mouthfeel.
The result is a whisky that stands out with its refined and complex character. The careful balance achieved through this method contributes to a uniquely drinkable whisky that truly ascends beyond expectations.

Finish Notes: Opens with orchard fruits, grape vine flowers, and marzipan. The finish evolves into a final ascent of warm brown baking spices, lingering gently with hints of candied ginger and a subtle spice that warms the palate.
