Using pure Golan spring water, our single malt soulfully breathes within our casks and matures within the unique middle eastern climate – a transformation of the spirit into miraculous whisky.

Extraction

Our newly distilled single malt spirit, with the addition of natural spring water is transferred into various casks, whereby the alcohol and water interact with the wood, extracting a range of flavors and color. These include wood sugars, aromas, lactones, color compounds, and tannins. Additionally, flavors from any previously held spirit or wine from our used casks are also imparted into the whisky during this maturation process.

Oxidation

During whisky maturation, several key changes take place. Oxidation occurs through the cask’s porous wood, helping to remove off flavors. The char layer inside the cask acts as a filter and also contributes to this process. Over time, the whisky’s character is refined through a chemical reaction known as esterification, which creates a range of flavors and characteristics, including fruity, floral, smokey and baking spice notes and aromas, common in whisky maturation.

Climate & Environment

Evaporation through the cask—commonly referred to as the “angel’s share”—results in a loss of whisky to the atmosphere. Our warm middle eastern climate results in frequent cycles of expansion and contraction as the whisky moves in and out of the barrel. This dynamic speeds up the aging process, intensifies the flavors, and increases the evaporative loss over a shorter period. Furthermore, humidity vs. dryness of environment as well as circulation of airflow and the location of individual barrels within our warehouses are all factors which play a role that influences the whisky’s maturation and flavor profile.

Finishing & Blending (i.e. Marrying)

The final step in maturation is blending, also known as marrying, and finishing. During this phase, the cellar master or master blender combines whisky from multiple casks or batches to create a new layered flavor profile. In a process known as multi-cask whisky maturation, whisky is transferred from one barrel to another, allowing the new cask to impart additional or complementary flavors through the maturation processes described earlier. The finishing process also enables the master blender to enhance or balance the whisky’s final flavors and aromas, akin to how a chef adds finishing touches to a dish with specific spices. Finishing can vary in duration, ranging from a few months to a longer secondary or even tertiary period of a year or more.
